Instructions
Step 1: Prep the steak
Pat the sirloin cubes dry with paper towels. This step is important for getting a good sear.
Season lightly on all sides with salt and black pepper.
Step 2: Sear the steak bites
Heat a large skillet over medium-high heat until hot.
Add a small splash of oil if desired.
Add the steak cubes in a single layer, making sure not to overcrowd the pan.
Sear for 2 minutes per side, flipping only once, until browned and caramelized.
Tip: Leave the steak undisturbed while searing to develop a deep crust.
Step 3: Add the garlic butter
Reduce the heat to medium.
Add the butter to the pan. Once melted, add the minced garlic and stir for 20–30 seconds, just until fragrant. Be careful not to burn the garlic.
Step 4: Finish with lime
Turn off the heat.
Squeeze the fresh lime juice over the steak bites and toss gently to coat everything in the garlic butter sauce.
Taste and adjust seasoning if needed.
Step 5: Serve
Transfer the steak bites to a serving plate or bowl.
Spoon the extra garlic lime butter from the pan over the top.
